Know where
Find places near you that sell lobsters. You could check out markets with tanks overcrowded with lobsters. If you can get to a reputable supplier nearby, though, that’s a good place to start.

If you’re near enough to buy them straight from New England suppliers—lucky you!—then you already know enough not to remove the rubber bands on the claws.
Pick a type
There are two types of lobsters—the hard-shell and soft-shell lobsters. Meat from soft-shell lobsters tends to taste sweeter, which makes it a favorite of many seafood lovers. Hard-shell lobster meat, though, comes with a bit of a fishier taste. They’re tougher too, so they travel much better than soft-shell lobsters, the Food Republic says.
